With Diwali on 8 November, many homes are already planning their festive sweets. If you want something quick, foolproof and loved by everyone, coconut ladoo with condensed milk is the answer. It needs no sugar syrup, no special skills and is ready in about 15 minutes.
Ingredients (makes 14 to 16 ladoos)
- 2 cups (about 160 g) desiccated coconut, plus 2 to 3 tbsp extra for coating
- ¾ cup (about 200 g) sweetened condensed milk, roughly half a standard tin
- 1 tbsp ghee
- ¼ tsp cardamom powder
- 1 tbsp chopped cashews, almonds or pistachios (optional)
- A few saffron strands soaked in 1 tsp warm milk (optional)
Method
- Roast the coconut: heat the ghee in a heavy-bottomed pan on low heat. Add the desiccated coconut and roast for 2 to 3 minutes, stirring constantly, until it smells fragrant. Do not let it brown.
- Add condensed milk: pour in the condensed milk and mix well. Keep stirring on low heat.
- Cook until it comes together: after 4 to 6 minutes, the mixture will thicken and start leaving the sides of the pan, forming a soft mass.
- Flavour: add the cardamom powder, chopped nuts and saffron milk if using. Mix and switch off the heat.
- Cool slightly: transfer to a plate and let it cool for 3 to 5 minutes until it is warm but comfortable to handle.
- Shape: grease your palms with a little ghee and roll small portions into smooth balls.
- Coat: roll each ladoo in the extra desiccated coconut and top with a pistachio sliver.
Tips for perfect ladoos
- Keep the heat low throughout; condensed milk burns quickly.
- If the mixture is too soft to shape, cook it for another minute or add a spoon of desiccated coconut.
- If it is too dry and cracks, add a spoon of condensed milk or warm milk.
- Shape while warm; once fully cold, the mixture becomes harder to roll.
- Fresh grated coconut works too, but the ladoos will be softer and must be eaten within two to three days.
Easy variations
- Rose coconut ladoo: add 1 tsp rose water and a few crushed dried rose petals.
- Chocolate coconut ladoo: mix in 1 tbsp cocoa powder with the condensed milk.
- Stuffed ladoo: press a piece of gulkand or a whole cashew into the centre before rolling.
- Jaggery version: skip condensed milk and cook the coconut with melted jaggery and a little milk for a more traditional taste.
- Mawa coconut ladoo: add ½ cup crumbled mawa (khoya) for a richer, milkier ladoo.
How long do they keep?
Store the ladoos in an airtight container. They stay fresh for about 2 days at room temperature in cool weather and up to a week in the refrigerator. Bring them to room temperature before serving for the softest texture.
Serving and gifting ideas
Place the ladoos in paper cups inside a small box or tin, and add a few kaju katli or besan ladoos for a homemade Diwali gift hamper. They also make an easy offering for Lakshmi Puja.
