Paneer bhurji is the vegetarian answer to scrambled eggs, and in many Indian homes it is the go-to dish when time is short and appetites are big. Crumbled paneer is tossed with a quick onion-tomato masala and everyday spices to make a soft, flavourful dish in about 15 minutes. It is rich in protein and works for breakfast, lunch boxes or a quick dinner.
Why you will love it
- Fast: Ready in about 15 minutes.
- Protein-rich: Paneer is a good vegetarian protein source.
- Versatile: Eat it with roti or pav, stuff it into sandwiches or serve on toast.
- Kid-friendly: Adjust the spice level easily for children.
Serves and timing
- Serves: 2 to 3
- Preparation time: 5 minutes
- Cooking time: 10 minutes
Ingredients
- 200 grams paneer
- 1 tablespoon oil plus 1 teaspoon butter
- 1/2 teaspoon cumin seeds
- 1 medium onion, finely chopped
- 1 teaspoon ginger-garlic paste or grated ginger
- 1 green chilli, finely chopped
- 1 small capsicum, finely chopped (optional)
- 2 medium tomatoes, finely chopped
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon Kashmiri red chilli powder
- 1/2 teaspoon coriander powder
- 1/2 teaspoon garam masala or pav bhaji masala
- 1/2 teaspoon kasuri methi (optional)
- Salt to taste
- 2 to 3 tablespoons milk or water
- 2 tablespoons chopped coriander
Steps
- Crumble the paneer: Grate the paneer or crumble it with your fingers into small, uneven pieces. Keep a few slightly larger crumbles for texture.
- Temper: Heat oil and butter in a pan. Add cumin seeds and let them crackle.
- Cook the onions: Add the onions and saute on medium heat until soft and light golden, about 3 to 4 minutes.
- Add aromatics: Stir in the ginger-garlic paste and green chilli. Cook for a minute until the raw smell disappears.
- Add capsicum: If using, add the capsicum and cook for a minute so it stays slightly crunchy.
- Cook the tomatoes: Add the tomatoes, turmeric, chilli powder, coriander powder and salt. Cook until the tomatoes turn soft and mushy, about 3 to 4 minutes. Mash them lightly with the back of your spatula.
- Add the paneer: Tip in the crumbled paneer and mix gently so it is coated with the masala.
- Keep it soft: Sprinkle the milk or water over the bhurji. This keeps the paneer moist and creamy.
- Season: Add garam masala and crush the kasuri methi between your palms over the pan. Cook for one to two minutes only.
- Garnish and serve: Turn off the heat, add coriander and a squeeze of lemon if you like. Serve hot.
Tips for soft, tasty bhurji
- Do not overcook the paneer. Cooking it too long makes it rubbery and dry. Two minutes after adding is enough.
- Use fresh paneer. Soft, fresh paneer gives the best texture. If using store-bought paneer that feels firm, soak it in warm water for 10 minutes before crumbling.
- Cook the tomatoes well before adding paneer, so the masala is not raw.
- Add a splash of cream for a richer, restaurant-style version.
Variations
- Vegetable bhurji: Add green peas, grated carrot or chopped spinach.
- Tofu bhurji: Replace paneer with firm tofu for a dairy-free version.
- Masala bhurji pav: Add a little pav bhaji masala and serve with butter-toasted pav.
- Egg and paneer bhurji: Scramble two eggs with the masala before adding paneer.
Serving ideas
Serve paneer bhurji with hot phulkas or parathas and a side of salad. For breakfast, pile it onto toasted bread or stuff it into a sandwich with green chutney. Rolled up in a roti with sliced onions, it makes an easy lunch-box wrap that children love.
Storage
Paneer bhurji tastes best fresh. Leftovers can be refrigerated for up to a day; reheat gently with a splash of milk to keep it soft.
